Delicious grapes for the sweet and savory autumn cuisine

Local grapes are currently in high season. The delicious berries are usually enjoyed straight. But they can also be used to conjure up tasty preparations. Their ingredients show various health-promoting effects. Among other things, they ensure better digestion.

As the Federal Center for Nutrition (BZfE) explains, every German eats more than five kilograms of table grapes a year. Along with apple and banana, the juicy fruits are among the most popular fruit in Germany. The berries taste sweet and quickly provide the body with energy. This is due to the high content of fruit and grape sugar - and that at around 70 kilocalories per 100 grams. The fiber and fruit acids contained in grapes stimulate the intestines and are therefore a suitable home remedy for constipation. In addition, the berries contain valuable B vitamins such as folic acid, vitamin C, potassium, flavonoids and phenolic acids.

Grapes are versatile

Grapes are best eaten fresh as a snack from hand to mouth. But they also provide a refreshing sweetness in muffins and as a cake topping. The BZfE has a recipe for a quick dessert for two people: mascarpone (75 g), skimmed curd cheese (125 g), a tablespoon of milk and sugar and a pinch of vanilla are first mixed into a creamy mixture. Then crumble biscuits like Amarettini and halve ten grapes. Finally, layer alternately cream, grapes, cream and biscuit crumbs in a glass and enjoy.

It is far less common to use grapes for hearty dishes. The sweet fruits are the ideal partner for fish, game and poultry, sauerkraut, nuts, cheese and also root vegetables. How about a tarte flambé with grapes, goat cream cheese, pine nuts and rosemary? An autumnal salad made from lollo rosso, celery, walnuts, grapes and a Roquefort dressing is also delicious.

Clean just before eating

The grapevine is a climbing shrub that needs a sunny, warm location. There are vines with green or yellow ("white") grapes and red to blue-red grapes. Table grapes are available all year round, although the seedless varieties now predominate in the trade. High-quality berries have green stems, are plump and juicy and are firmly attached to the stem. By the way, according to the BZfE, the white coating is very natural. It protects the fruits from drying out. Grapes should be ripe, but not overripe. They are cleaned thoroughly with lukewarm water just before eating. (ad)
